Taco Cupcakes




I found this recipe on Pinterest and my family fell in love!! I think you will too...it is so easy and fun to make, and it makes a great meal or side dish for a party! Hope you agree with me!!

You will need:

chili oil (I use olive oil)
1 lb. ground beef or turkey
1 to 2 packets taco seasoning
3/4 cup to 1 can black beans, rinsed and drained
1 package wonton wrappers (my grocery store keeps them with the stir fry veggies)
1 jar of queso dip or salsa con queso
1 jar of chunky salsa
2 cups Mexican shredded cheese
Guacamole and/or sour cream for serving

You probably won't use the full jars of con queso and salsa, or 2 full cups of cheese. Just play with it and make it your own. The recipe I found called for 1 T. of taco seasoning...I found the full packet (or a bit more) was tastier. You decide!

Preheat your oven to 350
Brown the burger in 1 T. oil, and lightly coat muffin tins with cooking spray. When the burger is browned, add taco seasoning, and black beans. Stir and warm.
And now you start layering everything in this order: wonton wrapper (just lay it in, gently pressing the middle down, 1 tsp. queso, approx. 1 tsp. beef mixture, 1 tsp. salsa, then sprinkle mexican cheese on top. Ok...now another layer like the first one. Lay the wonton wrapper on top of what you just did and lightly press it down around the edges, almost like you would a pie crust...the key is to press it lightly! Now start with the queso and add everything as the first layer. Thats it...easy, right? 
Now pop it in the oven for about 15 minutes...till it is bubbly and lightly browned.
Let it sit for at least 5 minutes...then I use a knife to loosen around each cup and carefully take them out and set them on a serving dish. It is so cool how they hold their shape!
You can get at least 18 cups using 1 pound of beef or turkey....so adjust the recipe for your needs. If you use a little bit more than a pound you can certainly get a full 2 dozen.
